Saturday is Soup Day at What a Hoot. The Girl Campers gather at Beaver Creek State Park in the spring and fall…both wonderful times to camp and both offering cool nights when a hot mug of soup is most welcome. Yesterday morning it was all of forty-one degrees when I woke up. The perfect day to get out the crockpot and make something yummy.

I’m really getting the hang of cooking in the RPod. It’s a compact kitchen, but there is plenty of storage in the ample pantry…even for this monstrous 8-quart slow cooker. There are always several varieties of soup at the Saturday evening meal. This year, I decided to make beef and noodles…a wonderful comfort food that never fails to satisfy.

I bought a big chuck roast, some pre-diced onions/celery/carrots, a large pack of sliced mushrooms, some beef broth, a family sized jar of prepared beef gravy, and a 24oz. bag of frozen noodles. I sear each side of the roast in my iron skillet, then sauté the veggies and mushrooms, and put it all in the crockpot. I pour the bottled gravy and about a cup of the beef broth over the whole thing and simmer it on low for about eight hours. About an hour before I’m ready to eat, I throw in the bag of noodles and add another cup or so of beef broth. I turn it up on high and when the noodles are done, it’s dinner time! One of the nice things about having the leftovers is packing up individual containers and putting them in the freezer for meals down the road. 

I realized last night, I haven’t been as conservative with water as I thought and my freshwater tank is down to 1/3 full, which means I have approximately 10 gallons left on board. I have at least two more nights camping before I can refill my fresh water and dump the grey and blackwater tanks so I’ll need to watch more carefully. I can warm up leftovers the next couple of days and use paper plates so I’ll be fine.

I think Diane had a good time camping. She enjoyed the girls and the campground. She learned a lot about staying in a travel trailer. The only camping experience she ever had was sleeping in a tent in Girl Scouts…which she hated. She really liked the RPod. I don’t know that camping will be an activity she seeks out in the future, but it sure was fun to show her the ropes and to spend some time with my good friend. There have been a lot of people who never dreamed of camping and end up enjoying themselves…whether or not they ever take it up as a pastime.
