For a little ten pounder, this turkey sure gave us a lot of meals. The two of us didn’t eat very much of it. I got a good-sized container of meat for sandwiches and maybe a casserole. Then I cooked down the carcass and got two quarts of wonderful, rich broth. I also got two containers of broth with meat and veggies for soup. And a quart of meat to make turkey salad. That’s a lot of potential meals from a ten pound turkey.
As I was preparing to spatchcock the turkey, I got out the camera and tripod to take a video to demonstrate the process. I went through the whole thing, stopping and starting the camera. It was going great! Then I sat down in the afternoon to edit the video and… all I had was snapshots. I didn’t have the camera on video at all! So, you get photos today instead of a cooking video.
I had quite the fright on Tuesday evening. I’d been having trouble with my iPad for a few days. First it was crashing regularly. Then it said the memory was full. I started taking stuff off of it and it still said it was full. I disconnected it from the cloud and that removed 36,000+ photos and it STILL said it was full. When it crashed again, I knew there had to be some sort of bug involved. I figured the only thing I could do was erase the iPad and bring it back to factory settings.
All went well. I downloaded the apps I needed to write my posts. Then, when I went to schedule yesterday’s post… I couldn’t get into Facebook. I couldn’t access any of my writing. I lost all my copies of the part that I post on Facebook. I could feel anxiety creeping in but I managed to create the post on my phone and decided to have a good sleep and work on it in the morning. I often sleep on a problem because the next morning, it seems the answer is right in front of me. I took Facebook off the iPad and re-installed it. And sure enough, it works perfectly!
I remember when my mom died in 2004 and I spend six months in West Virginia renovating the house for sale. There was no earthly way I should know how to do half the things I did, but I had books on electrical, plumbing, and all manner of fixit things. When I lay down at night, I read a little about what I needed to do the next day but it didn’t always make sense to me. I didn’t know what the tools were called or what the procedures were called. Then, when I woke up, I just KNEW. It was uncanny.
I am finally at a place where I can just knit and work on Christmas stuff. There are still so many things around the house that needs done, but I can get to that after the holidays. Now that I have so much of my list completed, I can just enjoy December. What a treat!
I hope you all had a good Thanksgiving. Did you try a new menu or do something different? How did it turn out. Share a recipe or links so we can try it, too. Maybe we’ll have Virtual Cookie Exchange sometime before Christmas!

“This is what I have observed to be good: that it is appropriate for a person to eat, to drink and to find satisfaction in their toilsome labor under the sun during the few days of life God has given them—for this is their lot. Moreover, when God gives someone wealth and possessions, and the ability to enjoy them, to accept their lot and be happy in their toil—this is a gift of God. They seldom reflect on the days of their life, because God keeps them occupied with gladness of heart.”
Ecclesiastes 5:18-20 NIV
