A Lazy Day

Supper…yummmmm!

Honestly…we didn’t do mucha nuthin’ yesterday. We slept in, had our breakfast, and sat firmly rooted in our Big Red Chairs all day. Along about 4:00, Mr. FixIt said he was getting a little hungry so I made lamb chops with rice and asparagus. I sautéed mushrooms and Vidalia onions in butter and removed them from the pan. I seared four lamb chops seasoned with Tabitha Brown’s Sunshine Spice Mix with a little extra garlic then deglazed the pan with a splash of Fre…red de-alcoholized wine. I drizzled a little buckwheat honey and fresh orange juice over the chops and set them aside to rest for a few minutes. Then I tossed the mushrooms and onions back in the pan with a pat of butter and served that over steamed white rice. I also steamed some fresh asparagus with lemon and butter in the microwave. The whole meal was finished in thirty minutes and was as good as any you’d find in a restaurant for less than a quarter of the cost. Mr. FixIt gave his hearty approval and you know it feels great to please your man’s tummy!

We read on the internet that the Northern lights might be visible if we happened to get a clear sky late last night so we made plans to drive out to the Calhoun County Park. It’s about fifty minutes from us, but it is a designated “Dark Sky” area and we figured we might get a better view from there. I have seen the Aurora Borealis twice before in my life. The first was when I was a little girl…maybe about five or six. We were staying out at The Farm over the weekend. My dad came in and woke me up to tell me he had something special to show me. He carried me outside in my jammies and pointed up to the sky. There above us were green and pinkish yellow bands of light dancing across the sky. It is one of the few good memories I have of my dad doing something nice with me.

The second time I saw the lights was about midnight sometime in the mid-00’s. Mr. Virgo was still living and he always went to bed really early so I stayed up…probably to play a game on my iPad or work on my genealogy. I was calling it a night and went to the door to check the lock when I caught a glimpse of something in the sky over the Flattops Wilderness Area. It was unmistakably the Northern Lights dancing across the sky. I thought of waking him up, but he had to get up at 3:00 and had a long day ahead of him so I just watched by myself. It didn’t last very long and they just faded away. I’ll let you know tomorrow if Mr. FixIt and I catch sight of them.

Other than that, it was a pretty low key day. I learned another one of my mom’s cousins passed away last week. She was 95 years old…the oldest of her branch of the family and the longest lived. I spoke to my cousin Tommy’s widow. It’s been several years since Tommy passed away and she has found love again. She never would have dreamed it would happen. They are such a good match and I’m so happy for her. It was much cooler here yesterday with rain off and on. And, today I am meeting the Former Mrs. FixIt and our daughter at the library for a needlework class. Fun weekend ahead with Mother’s Day!
