A Slow Sunny Saturday

Saturday is college football day at our house and the Mountaineers are the center of the universe. We had a late start to our day and WVU had a fairly early game, so that made for a lovely brunch in front of the television, cheering on our favorite team. I still had some cornmeal mush leftover so I sliced and fried it in butter. I have to remember to cook it longer next time because it was just a little too wet. That makes it too soft and it falls apart easier. Still, if you fry it up crispy and golden and serve it with butter and syrup…oh, my! It’s SO good. We had the leftover biscuits from Friday along with sausage patties and eggs over easy. It was a filling, stick-to-your-ribs breakfast that lasts all day.

Mr. FixIt left in the afternoon to go help his friend Joe with a few odd jobs so I had the afternoon home alone. This doesn’t happen too often, so I curled up in my recliner with my knitting and binge watched Tipper Pressley and Brenda Gantt videos on YouTube. Of course, now I want to make butter…and pecan pralines…and the perfect corn bread in a cast iron skillet. Those shows always make me hungry and just when I thought I’d have to get up and bake something, Mr. FixIt called to say he was on his way home.

Just before he came home, I put Pumpkin kitty in her great big building and did a little walk about to see what’s growing around the yard. I noticed the ground moles have tunnels dug all through the yard that mash down when you step on them. I pulled a couple of handfuls of seed pods off one of the redbud trees in the hedgerow. The leaves have all but finished falling off the pear trees. I found two or three pears but only one I could reach. It came off in my hand when I touched it, but it’s as hard as a rock. I brought it in and placed it on the windowsill in the kitchen to see if it will ripen. 

We have a little mom and pop grocery store in our town. They grind their own burger and man is it ever good. My sweetie brought some home the other day and we had hamburgers from it. There were a couple left over so I heated them up for a quick supper. Mr. FixIt wanted pork and beans so he opened a can. I can’t hardly eat those after growing up with them. Most of the time, Mom would just open the can and dump them in a serving dish cold, stick in a spoon, and call it good. To this day, I won’t touch them unless I’ve doctored them up with a little BBQ sauce, brown sugar, bacon, and onions, and bake them.

I caught a beautiful shot of the trees on top of the far hill glowing in the last of the setting sunlight and they were remarkable. It just about takes your breath away, the beauty that surrounds us every day. I see bounty at every turn. Mr. FixIt finished unloading the firewood so the trailer is free to go pick up the roof shingles…hopefully tomorrow. We took an old wood pallet and stacked the wood on it to keep it up off the wet ground. Some of it was dry, but the majority of it is still green, so this will be for fires next year.

Hmmmmm….I’m still thinking of those pecan pralines. I think I’m going to HAVE to make some!
