Twice a year, Spring and Fall, I go camping with the girls at Beaver Creek State Park near Liverpool, Ohio. It’s a Mister/Sister trip so we can bring our beaus if we’ve got ‘em. I usually go for a couple days alone so I can gab with the girls and drink coffee all day in my jammies. Then Mr. FixIt comes up and joins us. Much of the time, it’s him and about 15-20 women. He is in his element, let me tell you! He can gab with the best of them.

One of my favorite parts of Beaver Creek is the Pioneer Village. We’ve been there twice now for the Civil War Re-enactment and we walk around the village and look at the old buildings. There is a large grist mill that has been renovated. Several times a year, The mill trace is filled with water and the wheel at Gaston’s Mill turns and grinds corn meal as well as whole wheat and buckwheat flour.

When I was a little girl, my dad would make buckwheat flapjacks. In our house, if you made them out of flour, they were pancakes. If you made them out of corn meal they were corn cakes or hoe cakes. You’ll normally see them just called Buckwheat Pancakes. I didn’t really like my dad’s flapjacks. They tasted bitter to me, so all my life I’ve said I didn’t like them. When Gaston’s Mill runs, the flour and meal sell out quickly. I was thrilled the last time we were there to find the refrigerator full of one and three pound bags. I stocked up and at the last minute, decided to try the buckwheat flour.

My friend Gail is the camphost at Beaver Creek. I texted her Tuesday and asked her what recipe she uses for her buckwheat. She sent me the link and I made a batch Tuesday morning. Oh…Em…Geeeee! They were SO good. Not bitter at all. My new favorites, even though it’s a pretty complex recipe compared to box mix.
