Day 116: It’s Marshmallow Season!

MARSHMALLOWS!

It won’t be long before these tasty treats will be showing up in farmer’s markets everywhere, because….Marshmallows are in Season!!! That’s what Daughter #1 told her little sister when she was about four years old. They grow them big like this, then they cut them up in little pieces, put them in bags, and ship them off to stores. The weather has to be just right to get a bumper crop like this one. I was driving out to the farm yesterday, came around the turn…and there they were. Oh, there is NOTHING like fresh, vine-ripened marshmallows!

I’ll bet you never heard of the Great Marshmallow Disaster of 1957. I guess it rained so much that summer the marshmallows just floated off down stream. And the ones they were able to salvage were a sticky mess. It was terrible. Little campers everywhere had to eat nothing but graham crackers and chocolate…poor dears. I believe they were scarred for life over that one.

I can’t drive through the West Virginia countryside without pulling over and capturing them in their native habitat. When they’re wild like this is when they’re the sweetest. I’m thinking we should grow them here on our acreage and have an Annual Marshmallow Festival! What do you think?

After my breathtaking discovery, I went to the farm and finally finished the taxes. I really struggled with them Friday. Then, after sleeping on it, I woke up yesterday morning and knew what to do. I just chucked Friday’s return and started over with a brand new one yesterday. And, wouldn’t you know it…I breezed right through the whole thing and it was easy peasy. Last year we had to pay out the nose. This year, we still had to pay a little, but nothing like last year’s…so I was a VERY happy camper when I hit “send”.

Every year, I tell myself I will be ahead of the game. I’ll have things organized. And, every year it’s the same thing. I spend days doing the online banking, reconciling the books, running reports, and finally getting the data in TurboTax…just under the wire. It’s stressful. But, I think the getting mad at myself for not being more organized makes it worse. Next year, I’m just going to accept the fact that I have far more important things to do all year than to stay anal about the whole thing. A couple of years ago, I created the most organized thing I will ever achieve surrounding taxes. I place a big, flat Rubbermaid container with a lid on my desk. Then, whenever I walk in with something that has to do with taxes, it immediately goes in that tub. At least everything is in one place when tax time comes around. That’s the best I can do.

I’ll miss being out at the farm every day. I always love being out there. Since we made the commitment to have a cat and a garden, we really can’t run off and stay for any length of time at the farm. But, maybe when the garden is done, we can go out for a few days. We’ll take the cat…it’ll be an adventure!

Now that the taxes are done, I can turn my attention to the garden. I have a few crook neck and zucchini squash I am keeping an eye on. I want them to get really big so I can make Bread & Butter pickles out of them. That’s the BEST!

I’ll be baking today after church. I’m sending my girls some of mama’s sourdough bread tomorrow.

Enjoy your Sunday!
