I woke up yesterday and smiled at Mr. FixIt.
“I’m makin’ waffles!”
“Hey…that sounds great!”
I padded into the kitchen, got my coffee brewing, and started to gather my ingredients. I like to make high protein pancakes because I try to keep tight control on Mr. FixIt’s blood sugars. Poor man doesn’t stand a chance, marrying a Diabetes Educator. Regular pancakes will cause a spike in blood sugar then when the simple carbs burn off, it’s crash city and that not only feels bad, it’s not good for you.
I had the buttermilk, milk, and butter combined when I reached for the eggs and came up empty. Well, we had one…I needed three. I went in to tell my sweetheart I was running to town to get some eggs. While I was there, I picked up some more flour, another container of pancake mix, and some sugar free syrup. If you ever want a really good sugar free syrup, try Smucker’s. It tastes great and it’s thick, like regular syrup. Most sugar free syrups are runny. I got back and made a big batch of waffles. I had enough to freeze for at least two more breakfasts. You can just pop them in the toaster like the ones you buy in the freezer section.
While I was at the store, FedEx delivered my package from King Arthur. I ordered a sourdough crock and a starter. I thought it would be dehydrated, but I was thrilled when it arrived and was fresh! After breakfast, I cleaned the kitchen, filled my flour container with the fresh flour I bought, and fed the new starter. It smelled great. Kinda of sweet and fruity with a hint of sour. The one I was using for the last year and a half had developed a lovely fermented aroma with hints of wine and apples. It had matured so well, and I was hopeful it would last me a lifetime, but I neglected it beyond repair.
I set the bowl aside with the new starter and saw Mr. FixIt off to run errands. Then I washed all the windows in the family room. I want to put the tree up so I needed to get those windows sparkling clean. I don’t know if you have ever used Norwex products, but I swear by their glass cleaning system. It consists of two cloths. One is a microfiber terry. You wet it and scrub the glass with it. You never use soaps or chemicals with these cloths. The second cloth is smooth and has a kind of sheen to it You wipe the glass dry and polish it with that one. When the cloths get soiled, you boil them in plain water and stir them with a wooden spoon to remove any dirt, let them dry on the back of the kitchen chairs then fold and put them away the next day. So, so simple and they work without streaking.
By the time Mr. FixIt got home, I was cuddled up in my recliner under my throw. My cousin received her books yesterday and texted. She LOVED them! She wanted to know if I had all those photos so she could scan them. I did her one better. I’ve already scanned them all so I’m in the process of emailing them to her. I can only send five photos in each email because our internet is so slow. But hey…where else do I need to be? It’s a small labor of love for my sweetest cousin.
I bought candied fruit at the store yesterday so I’ll look for my Aunt Marge’s White Fruitcake recipe today and get started on that. I’ll have Mr. FixIt bring the decorations up from the basement so we can get that going as well. It’s going to be pretty cozy in here soon!
