My son-in-law’s Grandma is one of the sweetest and feistiest women I know. Grandma Lois is 90 and now lives in a nursing home. But up to just a few years ago, she drove herself around in her little Ford and assisted in a grade school classroom several days a week.
Grandma Lois and Grandpa Bud had an upholstery business. She was always a hardworking woman. She didn’t stop working when her husband passed suddenly. She’s the matriarch of a wonderful, salt-of-the-earth family. I tell people when Daughter #1 got married, she won the lottery with these wonderful people.
Grandma was a member of a womens’ social club. One gathering had everyone bring their favorite recipe on a card to exchange. This is the recipe she received that day. My son-in-law LOVES chocolate cake and this is the family’s go-to chocolate cake for special occasions. I took this one with me to my cousin’s for Thanksgiving and I’ve had many requests for the recipe. I always check with the source before I share old family recipes and they were happy to let more people enjoy this yummy cake.
I’ll make another one to serve for drop-in company here at the Ponderosa. Hope you enjoy it!
Favorite Chocolate Cake
3 cups flour
2 cups sugar
2 tsp. Baking soda
1/2 tsp. Salt
1/4 to 1/2 cup cocoa
Sift together the above then add –
2 eggs
1 cup Wesson Oil
2 T. Mayo
3 tsp. Vanilla
1 cup sour milk (add 2 T. Vinegar to milk & let sit 5 min.)
OR you can use one cup buttermilk instead
1 cup boiling water
Put all ingredients in bowl; put boiling water in last. Beat 2 minutes or so.
Bake in 350 degree oven for 30 minutes or until a toothpick inserted comes out clean.
Let cool in pan for 10 minutes then tip out on a cake rack to cool. Slice “domed” top from each layer before frosting with your favorite icing.
Makes two good sized layers.
If making cupcakes, bake for 20 minutes.
