Another long day of preparations. I cleaned and roasted two sheet pans of butternut squash and Brussels sprouts and put them in the fridge. I made two loaves of bread and two dozen dinner rolls. I froze the dinner roll dough and will thaw them and let them rise on Friday. Then they’ll hopefully come out of the oven hot and ready to eat when we . I cut up the two loaves (minus a slice with butter for each of us!) and added it to another loaf of a more rustic bread that I bought this week. I tore them all up and I’m drying them in the oven for the dressing.
I need to bake the pies today…pumpkin and apple. I also need to prep the turkey, rub it down with the dry rub and put it back in the fridge overnight. I need to finish cleaning the dining room and dress the table. Then I can decorate the tree! We got it put up on Tuesday and I put the lights on it yesterday.
Mr. FixIt finished picking up the old shingles and I helped him fold up the huge tarps they were on. We’ve picked up all the new shingles from the hardware store so they’ll rest on a pallet till next summer. We’ve made a lot of progress getting things tied down for the winter. It’s been so bitter cold here.
I truly love this time of year when people call and connect with each other. I got to FaceTime with Daughter #1 and Big. She’s in from college and has SO many stories to tell. Daughter #2 will be with her dad today so they’ll FaceTime at some point. I got to catch up with one of my dearest friends last night. You know…that friend you go ages without talking to, then when she calls, you pick right up where you left off. She’s enjoying her first grandchild so the stories were full of love and wonder!
I am really looking forward to next week. The rush of Thanksgiving will be over and I’ll have a little time to just enjoy the fruits of our labors and catch my breath. I pray for all those whose loved ones won’t be with them this holiday season. I pray for all who are facing health issues and financial uncertainty. I pray for all those lost to senseless gun violence and their shell shocked families left behind. And, I pray for all of you…that you have a safe and healthy day.

Happy Thanksgiving to you & Mr. FIXIT. We were camping, but the weather got ugly, so we decided to come home today. We’re camping in the driveway, since all my fixings for a small Thanksgiving dinner for 2 is in the camper. So now I’m fixing a small amount of cornbread dressing, flat beans and whole potatoes. Some sweet potatoes, cranberry sauce and sweet bread n butter pickles . ….oh I almost forgot the Turkey it is carved turkey deli style
