When either one of us go to town, we can just about bet one or the other of us will stop at Sam’s. We have a large pantry and I keep it well stocked. There were times both of our families experienced food uncertainty, so I am a food hoarder. I always have been. In the past, I automatically bought two of everything when I shopped for food. Fortunately, Mr. FixIt has helped me become more frugal in our years together so I don’t feel that compulsion to over buy. Still, we have enough food to carry us through at least a few months.

Mr. FixIt had an appointment in town last Wednesday, so he called me from Sam’s to see what we needed. We were getting low on eggs and they are…well, scarce as hen’s teeth. Sam’s carries those crates of eggs with 7.5 dozen eggs. It came it to $4.10 a dozen so I told him to go ahead and get them. Then I had to make some room for them in my fridge. 

We eat a lot of eggs. Now that I am making these Sourdough English Muffins, I fix us a breakfast sandwich that put the fast food joints to shame. It tastes a lot better and I know what’s in it. We eat grits a couple of times a week with a couple of over-easy eggs on top. If we have pancakes, Mr. FixIt likes a couple of eggs on top of his. Of course I need eggs when I make French Toast. I think I’ll bake a quiche today for our supper.

Mr. FixIt’s league is bowling at 1:00 today so everyone can be at home for the Super Bowl. I’m always excited when the Eagles make it there. Mr. Virgo loved the Eagles since he was from South Philly. Every year we were together and they would tank, he’d say, “They just break my heart…every single year.” They never won the Super Bowl till 2018…five years after Mr. Virgo died. Oh, he would have been SO excited! That’s why we have to cheer them on in his memory!

Today I am grateful to have a pantry full of ingredients to make nutritious food for my family. I am grateful for a well stocked kitchen with the tools I need to produce good meals. I am grateful to have an appreciative spouse who loves my cooking.
