We’ve been getting high wind warnings for days saying Saturday was going to be bad. I don’t know that it was any worse than last Saturday but the wind sure blew! We went out to take pictures of the pear tree blossoms before they were ripped from the branches and while we were out there, we heard a big tree crash on the ridge beyond the dirt road. We heard it going down, but there are so many trees up there we couldn’t see exactly where it was. All my life, I never really worried about a tree coming down on me…till I moved back here. All those year growing up, we traipsed around this woods like a herd of goats without a care in the world. Now if there’s a stiff wind and we have to drive someplace, I have my eyes on the trees as much as I have them on the road. I don’t know what I think I would do if I saw one coming down on me. Perhaps it would be kinder to just not watch it falling.
So, the power went out around 4:00PM. We called the power company and reported the outage. They estimated it would be back on at 8:00PM but I’m not holding my breath. The power went off just as I put supper in the oven. I made salmon filets the same way I made them a few weeks ago in my smaller iron skillet. I sautéed mushrooms and onions in a little butter, placed the salmon on top and spread some of that wild and long grain rice you buy in the microwave pouches all around the edge. I seasoned it with Tabitha Brown’s Sunshine Seasoning with a little extra garlic, fresh ground pepper and lemon juice. I covered the skilled with a lid and popped it in a 350° oven. It hadn’t been in there for five minutes when the power went off. These new stoves have a safety mechanism that turns the gas off if the power goes out so I just left the door closed and let it sit in the oven. About forty minutes later, I took the skillet out and plated the salmon and rice and it was divine! I think it would have been better to take it out a little earlier but it tasted great.
Mr FixIt got the generator out and started to make sure it was ready if the power didn’t come back on. That way we at least would have lights. I got out my knitting and started working on this sweater I started when I was camping with the girls. I have never knitted with real Irish wool before and it feels so rich and lovely. It’s a great, deep red tweed. I think it’s going to knit up beautifully and should make a pretty cardigan.
I worked on some new designs yesterday but the power went out before I was finished. Leaving them for today…or tomorrow. Who knows? We did a walkabout an caught some pictures of the flowers. The deep freeze nipped some of them, but I’ll take what I can get!
