Let the Sun Shine

OMGosh, y’all…the sunshine was amazing yesterday! It was 43° and it felt glorious after the deep freeze we’ve been in the last two or three weeks. Today. Will be warm as well, but there’s an 85% chance of rain! The downside of that is, the polar vortex is coming in with a vengeance and will stay through the week. I really don’t mind…as long as I don’t have a lot of places to go. I’m happy to be a hobbit and bake and crochet this market bag I’ve been working on.

We did have to venture to town yesterday. We had a very late breakfast at IHOP where I got a free stack of pancakes with my reward points. Way too much to eat so I brought half of them home. Then we picked up our prescriptions and headed right back. With more cold weather and snow in the forecast, and being a Friday, the store was packed wall to wall with people grabbing up milk, bread, and toilet paper like it was a precious commodity.

Mr. FixIt napped all afternoon in his Big Red Chair then went out to fill the feeders. He was having some trouble walking on the snow when he turned his ankle a little and by evening it was pretty swollen. We’ll have to keep an eye on that. 

When it was time to cook some supper, I took stock of my supplies and settled on Broccoli Cheese Soup. It’s the easiest thing in the world to make. I don’t usually keep broth in the pantry but I do have a jar each of chicken and beef soup base. I added a good tablespoon of the chicken base along with four cups of water and a heaping tablespoons of chopped dehydrated onion. I sautéed half a container of sliced white mushrooms and chopped about three cups of broccoli and added that to the pot. I added some black pepper and a couple shakes of Cajun seasoning. That always boosts the flavor of soups. I brought it to a light boil and let it simmer for five minutes. I mixed a whole can of evaporated milk and a tablespoon of Wondra Flour to make a white sauce and poured that into the soup pot. That simmered for three minutes till it was thickened. I added two cups of shredded Colby Jack cheese and stirred till it was melted then used my immersible blender to make the perfect creamy soup. I took some of the bread I made on Wednesday and toasted it for dipping. It was delightful!

It was a beautiful day and we had fun getting out and about for a little bit. Hopefully Mr. FixIt’s foot is better this morning or else we’ll have to go to town to get it looked at. Say a little prayer for him, please.

I am grateful we have adequate health insurance coverage as we age. There are so many who have none and they are left to fend for themselves. I’m grateful for our medical care team who take such good care of us. 🙏🏼

  1. Hooe your hubbies ankle is ok. Not beimg such a chef myself i always chuckle when you talk about something being “the easiest thing to make” followed by all the steps and ingredients 🤣
