I rarely ever take a nap anymore. I used to when the kids were little. And during Covid. Escapism at it’s finest. But the older I get, the more napping steals away my normal-such-as-it-is sleep cycle. The hot weather makes it more difficult to get a good night’s sleep and it caught up with me.
I was working on my laptop in the Big Red Chair. Mr. FixIt was sawing logs over there in his chair and I was nodding off. So I went in the bedroom to just stretch out for a minute and an hour-and-a-half later, I hear Mr. FixIt tiptoe down to hallway trying not to wake me. It was about time to fix supper anyway, so I got up and browsed the fridge for leftovers.
There was the smoked pulled pork, of course. Another sandwich was in order. There was a homegrown cucumber and half a Vidalia onion. I sliced them both into a bowl and sprinkled salt, pepper, sugar, a tablespoon or so of cider vinegar and filled the rest of the bowl with water and set it aside.
There were four ears of corn so I cleaned them. There was a a small container of leftover creamed tomato gravy. I heated everything up. Once the water was boiling, I dropped the corn in, turned off the heat and covered the pot. I set the timer for five minutes. Then I sliced the strawberries, sprinkled a little artificial sweetener on them and set them out at room temperature to soften and get juicy. When the timer went off, I threw everything together and we had a wonderful WV summer supper!
After the news, I whipped up the berry cheesecake ice cream to a dipping consistency in the Ninja Creami and served it over the strawberries with a healthy dollop of sugar free whipped topping. Cooking on the stovetop didn’t raise the house temperature appreciably and the dishes were finished in a jiffy.
Man, was it hot yesterday and it’s going to be more of the same over the next few days. By the time I was ready to get in the pool, there was thunder threatening, so I gave up on the idea. We had to get up really early this morning to take the truck in for service, so I called it an early night. I hope you are keeping cool. I’m going to have to mow both here and at The Farm sometime later this week and I don’t think there’s any one day better than the next. I think I’ll go out and stay overnight so I can mow early before it gets too hot.
I was happy to find out Daughter #1 finally got home from her trip to NJ for a family graduation. They had mechanical difficulties so they put her up in the airport hotel for the night. At least she got some sleep, but if you have kids, you know how it is. They’re never too old to worry over. This is exactly why I don’t fly anymore. I used to love it, but the idea of eating stuck and having to stand in lines and people getting unruly on the plane and dicey maintenance…I’m happy to drive and see the sights and sleep in my own little bed as we go cross-country.
