I sat in the Big Red Chair for a few hours yesterday and worked on the basket/tote that I’m crocheting using scrap yarn. It’s coming along and looks so pretty. I love the colors and feel good that I’m ever so slowly reducing my stash. We watch some shows on TV and Mr. FixIt snoozed a little in his big comfy chair. Along about 3:00, I asked him what he’d like to have for supper.
We both thought about it a while. In the past, I might have suggested he run over to town and get some hamburger and I’d come up with something. Instead, “Use it Up!” Went through my mind. I had a couple of pie crusts out to make an apple pie for our family Christmas, but with so many of them not coming due to covid, it was still in the fridge. I went through the ingredients I had on hand and one recipe came to mind…Quiche!
I love when a plan comes together and tastes yummy to boot. With things I already had on hand, I baked a beautiful Broccoli and Bacon Quiche in about an hour.
BROCCOLI & BACON QUICHE Preheat oven to 375°. Par-bake a readymade pie crust for about 10-15 minutes. Turn the oven down to 350°. Beat four large eggs. Add 1/2 cup milk and 1/2 cup heavy cream. You can use Half & Half instead of the heavy cream. Add 1/4th tsp each of salt, pepper, garlic powder, and Herbes de Provence (a blend of savory, marjoram, rosemary, thyme, and oregano.) Add 1/4 cup softened cream cheese and beat with an electric mixer till smooth and combined. When the crust is par-baked, sprinkle some grated mozzarella, crumbled bacon, and chopped broccoli in the bottom. Then pour the egg mixture over the top. Sprinkle with a little paprika and place in the oven on the middle rack. Bake for 50-60 minutes. Remove from the oven and allow to cool for ten minutes then cut and serve.
It was delicious, but it was a little too rich. When I make it next time, I’m leaving out the cream cheese and just using milk instead of adding the cream. If you try it, leave us a picture and tell us what you think!
